I would make a Lemon Pepper Panko Crusted Taliapia. Pan sear till crisp and serve with a lemon butter wine sauce.

I would actually make a Michael Chiarello recipe I saw on the Food Network. I have made them many times. You make mashed potatoe cakes and put grated cheese between two of them. Press them together and roll them in bread crumbs. I would use the lemon pepper panko instead.
I would make some turkey meatballs. That would be great.
